CMS guidelines require food and nutrition services to meet strict sanitary conditions. These conditions include the readiness of a facility for audits based on best practices for similar organizations. This seminar will discuss the current CMS requirements under §483.60(i)(1)(2) and §482.28 that apply to most food facilities, food services and dietetic services. The seminar lead by a quality assurance expert would discuss the legal requirements and practical solutions for compliance. Topics covered include offsite preparation worksheet (before survey entry); entrance conference worksheet (QIS facility copy); kitchen/food service observation; and disaster, emergency preparedness.
